Start your morning with premium, wild tuna caught in local Okinawan waters and landed at Naha's Tomari Port without ever being frozen. This meticulous process preserves its deep umami, natural sweetness, and signature tender texture. At the breakfast buffet, you can craft your own custom seafood bowl using this exceptional catch alongside local delicacies like sea grapes, Okinawan giant squid, and whole sweet shrimp.
The Chef’s Signature Shabu-Shabu: Motobu Bonito Meets Hokkaido Kelp
Okinawa’s Motobu Town houses the prefecture's only bonito flake factory, renowned for producing a smoked variety (ara-bushi) with a robust, savory aroma. Inspired by these bold local flavors, our Executive Chef has paired Motobu bonito with premium Hokkaido kelp to create a beautifully balanced, clean dashi stock. The ultimate way to experience this exquisite broth is through our shabu-shabu; lightly swirling the meat through the simmering soup instantly enhances its natural juices while releasing the rich, layered aromas of the kelp and bonito.

As a certified specialist in Chinese medicinal cuisine (Eiyo Yakuzen-shi), my culinary philosophy centers on pairing ingredients to unlock their maximum health benefits and flavors. For this new menu, my focus was fusing Okinawan cuisine and local ingredients with a luxurious "blended dashi" made from Motobu-raised bonito flakes. This aromatic broth gracefully elevates the natural flavors of our meticulously selected ingredients across both breakfast and dinner. I invite you to slow down and savor an exquisite dining experience that is gentle on the body and deeply comforting to the soul.

Embracing the theme "Eat Okinawa," our breakfast buffet features freshly prepared dishes made with local ingredients. The updated lineup introduces a savory Taiwanese-style shredded chicken rice, joining favorites like our tropical Pineapple Burger and Croffle Egg Benedict. Guests can also enjoy ten flavors of local Blue Seal ice cream, including "Yambaru Double Shower"—an exclusive, refreshing flavor made with local kabuchii citrus and acerola cherry.
